Sunday Roast Chicken

I have made this many times. It makes an excellent gift for a sick friend or to a family that for one reason or another 7needs a little something. It will feed 4 to 6 people and the leftovers are excellent. I usually gift it in a foil pan called a 5alf steam table pan ( approx 10.75nX12.3 inches) so they don’t have to worry about returns. There is usually plenty of broth in the pan should anyone care to make gravey but I recomend just spooning over everything on the plate. Be flexible and use what you have on hand.

Recipie

1 whole frying chicken – 4 to 5 pounds

2 lemons

3 carrots peeled and cut into 1 inch pieces

3 cups sliced potatoes scrubbed or peeled – I prefer Yukon gold

1 cup roughly chopped onions or leeks

Optional: Mushrooms, garlic cloves, cherry tomaoes, celery etc.

Olive oil

salt

Pepper

thyme – dired of fresh

1/2 cup white wine

Place chichen in pan and tuck vegtables around it. Cut lemons in have ane squeeze over chicken.stuff squeezed halves into cavity. Drizzel olive oil over every thing. Salt the chicken and vegtables to taste, sprinkle cracked peper. If you have it spread whole fresh thyme over everything, you can pul off the stems after the dish is cooked otherwise genoursly sprinkle dried thyme. Poor 1/2 cup wine or broth into pan. Place in over and back until thermoneter reads 174 when inserted into chicken thigh.
