Busy Day Chicken in a Skillet

Make this after a day at work. This can be made to serve 4 or more just add more chicken. I use chicken thighs with bone and skin on or you could substitue chicken breast – I recomend with skin on. I prefer to presoak brown rice but you can use any white rice straight from the box if you have forgotten to soak your rice.

Bussy Day Chiken in a Skillet

Oven 375

10 inch skillet sprayed with cooking spray.

1 cup brown rice pre soaked for minimum 6 hours or regular white rice

3 cups chicken broth or water

4 tablespoons olive oil or butter

1 teaspoon salt

At this point heat the skillet over medium heat to warm the water and rice.

Add 1/2 cup onion chopped

Optional: You may add celery, sliced mushrooms, tomatoes or sweet peppers sliced. A handfull of cherry tomatoes adds attractive color

4 large chicken thighs placed on top of the rice

1 teaspoon dried thyme sprinkled over the chicken thighs or 1 teaspoon peprika

Place skillet in oven and leave for approximately 45 minutes or until chicken registers 174 for dark meet of XXX for white.

Hint: If you have broccoli heads or say some aspergus you may place them under the chiken to prevent them from over cooking.
