Chocolate Bourbon Cake with Ganache Frosting

An easy one bowl cake, no mixer required

Equipment

  • 1 8-inch cake pan

Ingredients
  

For the Cake

  • 1 cup sugar
  • ¾ cup flour
  • ¼ cup Dutch processed Cocoa
  • 1 tsp baking soda make sure the box has not been opened for more than 6 months
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 3 tbls melted butter
  • ¼ cup bourbon
  • cup Buttermilk
  • ½ cup hot coffee this can be leftover but it needs to be hot to melt the cocoa

Chocolate Ganache

  • ½ cup chocolate chips
  • ½ cup whipping cream

Instructions
 

For Cake

  • spay cake pan with cooking or baking spray
  • mix the dry ingredients together.
  • Combine the egg, butter, Burbon and buttermilk.
  • Mix into the dry ingredients.
  • Add the hot coffee and mix, the batter will be thin.
  • Bake in 350℉ oven for approximately 35 minutes or until center is set.
  • Allow to cool on counter for 10 minutes, then invert onto cake plate.

For Ganache

  • Combine chocolate and whipping cream.
  • either melt over hot but not boiling water or carefully in microwave, stir, allowing chocolate to melt. As it melts you will first see the unmelted chocolate then it will darken. Pour it over the warm cake. It will thicken as it cools. Decorate as desired. Shown in this photo with pecan halves.

Notes

This a version of the cocoa cake recipe which is super easy to make, just a one bowl cake no mixer required. I top it with a chocolate ganache  which is also fast an easy.  While the cake is forgiving you must be careful to not overheat the cream chocolate chip mixture.  At first you will think it needs more heat, reality is just give it a minute.  If the cake is still warm it makes it easier to spread.
