Cherry Tomato Jam

My garden is awash in cherry tomatoes!! This is an easy way to create a healthy appetizer and use a few of those tomatoes. Simply flavored you can adjust the salt and other flavorings to your taste. I do not add sugar though one of my tasters said his mother did, but he liked it without better. I served it with a good bread. A definite easy yum!

Oven 375 degrees

Line baking sheet with foil and spray with cooking spray

4 cups cherry tomatoes halved

2 tablespoons olive oil combined with tomatoes

1 teaspoon salt

1 tablespoon dried basil or fresh if you have it

optional: 1 clove garlic crushed

Mix ingrediants to coat and spread on baking sheet in single layer

Cook for 30 minutes or more until tomatoes softened and of a jammy consistancy.
