With few ingredients, this is actually a very easy recipe and made with almond flour so gluten free.
Easy Almond Cake
This is a gluten free cake made with almond flour and eggs
Ingredients
- 1 whole orange simmer on stove for approx 30 mintues until skin softens
- 1 whole lemon
- 6 whole eggs
- 1 cup sugar
- 1 ½ teas baking powder
- 2 cups almond flour
Instructions
- butter a nine-inch springform pan or spray with cooking spray
- pre heat over to 375 degrees.
- simmer lemon and orange in water until the skin softens, approximately 30 minutes, remove pulp from lemon and seeds from orange and process in food processor until reduced to rough pulp. Set aside
- beat eggs add sugar and then beat until thickened and mixture forms ribbons when spilled from spoon.
- mix in paste from orange and lemon into eggs.
- Add and mix baking powder.
- add and mix into egg mixture the almond flour until combined.
- pour mixture into pan, if desired sprinkle with slivered almonds
- place pan on middle shelf in over and bake for approximately 40 minutes.
