Actually easy and this recipe produces a super moist cake with wonderful lemon flavoring.

Equipment

  • 1 9 X 5 inch loaf pan2

Ingredients
  

  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter
  • cups granulated sugar
  • 4 large eggs
  • ½ cup sour cream
  • 1 tsp lemon zest
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract

icing

  • 2 tbsp lemon juice fresh
  • cups powdered sugar

Instructions
 

  • preheat oven to 350 degrees, place rack in lower third of oven, spray loaf pan with baker's secret or you can spray with regular cooking spray then dust with flour
  • All ingredients should be at room temperature, all ingredients should be measured and prepared in advance
  • measure flour, baking powder, and salt into bowl and mix with whisk
  • place butter in bowl of mixer fitted with paddle or whisk attachment
  • cream butter for approximately 1 minute or until lightened
  • add sugar and beat on high for 2 minutes, scraping down bowl as needed
  • add eggs 1 at a time mixing at low speed to combine after each is added
  • add sour cream, lemon zest, lemon juice and vanilla and mix to combine, again scrape down bowl as needed
  • with mixer on low speed add flour mixture. Mix until just combined
  • batter will be thick. Spoon into loaf pan and level the batter.
  • place in 350-degree oven and back for 55 to 60 minutes until toothpick comes out clean – a few crumbs are okay but do not overbake.
  • remove from oven and allow to cool for 10 minutes before removing from the pan
  • prepare icing by mixing lemon juice with powdered sugar, ice cake while still warm

Notes

I’ve tried many times to create a lemon sour cream pound cake ant this is my favorite so far.  It is very moist and has a super lemon flavor.  Do not over mix the flour as it will develop the gluten and do not over bake.  I insert a skewer to test for doneness, an occasional small crumb does not make me put it back in the oven. While still warm drizzle or spoon on the icing.  Enjoy!
