Oklahoma Cassoulet

An easy and quick version of the French dish and made with ingredients easy to find in Oklahoma!

Ingredients
  

  • lb. Bacon use sliced bacon, thin or thick, your choice
  • 1 medium Onion
  • 1 lb. Chorizo Sausage
  • 5 cups Great Nothern Beans You may used canned or dry beans. If you use canned rinse thoroughly. If dry remember you need to presoak and cook so allow for that. Follow the directions on the package.
  • 1. I can 14.5 oz. can diced tomatoes you can also use crushed.
  • 6 chicken thighs you can use whatever chicken part you like however white meat must be cooked to 160℉ and dark meat 172℉.

Instructions
 

  • Preheat oven to 375℉
  • Slice Bacon into approximately 1 inch pieces and lightly brown in casserole dish,
  • Remove browned bacon and drain all but approximately 2 tablespoons of the rendered fat.
  • You may brown chicken thighs in bacon fat at this point or not, it is optional but remove them from the fat as you will place them on top of beans prior to cooking casserole in oven.

Brown sausage in the casserole

  • Roughly dice onion, you should have between 1 and 2 cups. Add to sausage and cook until slightly wilted.
  • Add bacon back into casserole, and mix.
  • Add in beans, if you wish you may slightly mash about 2 cups of the beans
  • Add canned tomatoes and juice, mix, there should be approximately 2 inches of liquid in the bottom of the casserole, if needed add water.
  • Place chicken thighs on top of bean mixture. and salt and pepper chicken
  • Place casserole in 375℉ oven and cook until chicken is 172℉, approximately 45 minutes. thighs should be lightly browned.

Notes

This recipe is very forgiving, Like onion, add more, like bacon add more. Don’t like dark meat, use chicken breasts.  This is made to serve 6 people with leftover bean mixture which is great for a second meal served with biscuits or cornbread.  Love the beans, add more.  I have also made it with pinto beans, but I prefer it with the Great Northern beans.
